Daal Maash (Urad Split)

Cooking time: 40 minutes Serves: 5 to 6 Ingredients

  • 2 cup urad daal split (picture below)
  • 3 and 1/2 cup water
  • 1/2 cup oil
  • 2 and 1/2 tsp salt
  • 2 and 1/2 tsp turmeric powder
  • 2 and 1/2tsp crushed red chillis
  • 1 tbsp anaar dana
  • 1/2 tsp garam masala powder
  • 2 medium tomatoes (finely sliced)
  • 1 and 1/2 tsp cumin seeds
  • 1 tbsp garlic (chopped)
  • 1 and 1 /2 inch piece of ginger (cut into fine sticks)
  • 1 medium onion (finely sliced)
  • 1 green chilli (cut into 1/2 inch pieces)
  • 3 tbsp cilantro (chopped)

Tip: For best results, use measuring utensils. Note: Below is a picture of urad daal split. Urad_Dal_Split Method

  1. Wash daal 4 to 5 times and drain all the water. Add 3 and 1/2 cup water and let it soak for half an hour.
  2. After half an hour, add salt, crushed red chillis, turmeric powder, cumin seeds, garlic, ginger and tomatoes into the pot and put on high heat. Once it starts boiling, reduce the heat to low until the daal is 99% cooked (approx. 30 minutes). Mix it once in between. Make sure the daal is not over cooked. If the daal is done and there is still water in the pot, increase the heat to dry the water.
  3. Take a frying pan, add oil and fry the onion till golden brown.
  4. Mix the onion into the cooked daal,Add cilantro and let it simmer on very low heat for 5 minutes . While serving add garam masala and green chilli.
